Garam masala is a spice blend
widely used in Indian cuisine, from curries and lentil dishes to soups. Whole
spices of cinnamon, mace, peppercorns, coriander seeds, cumin seeds, and
cardamon pods are toasted in a pan to release their aromatic flavors, then
ground to a powder. The name for this blend translates to “warming spices,”
meant to warm the body and increase metabolism. The composition of garam masala
differs regionally, with many recipes across the Indian subcontinent according
to regional and personal taste, and none is considered more authentic than
others. The components of the mix are toasted, then ground together.
Garam masala is best when added
at the end of cooking and can even be sprinkled on a dish when serving. This
mix can then be used in curries, lentils, soups or just sprinkled in some
scrambled eggs.
